to use fresh garlic...
cut it into slivers
stab the meat with sharp skinny knife
insert the garlic slivers into the punctures

if you are using an oven to roast the meat...
preheat to 375
insert a rack into a roaster

rub salt and pepper liberally into the roast
when your oven hits 375 place the roast fat side up on the rack
put the pan in the oven

bake for one hour

turn off heat
DO NOT OPEN DOOR!!!

wait three hours
DO NOT OPEN DOOR!!!

reheat oven to 375
DO NOT OPEN DOOR!!!

depending on the size of your roast 20-40 minutes more
ours was 4.5 pounds...20 minutes was just rare

remove from oven

let it rest

consume with gusto!

no liquid
no cover
DO NOT OPEN DOOR!!!

the roast will have a nice bark and be moist and tender

we had some german neighbors who seemed boil everything
when their kids ate at our house they seemed surprised that food had color and flavor
perhaps you do it differently
