I have never traveled internationally so my experience is limited to domestic North American travel. As mentioned before, the experience was much better in the early 1960’s to sometime in the 1970’s when rising fuel costs forced cutbacks in services to stay profitable.
Who knows why the free things haven’t been kept as company philosophies and values. Perhaps employee morale is low because of poor management.
Most likely your explanation is correct. Also associated is that the staff get the message that cost is the driving force in management thinking and therefore behave as though cost, which also puts them under pressure is, primary. Also, frequently the pleasantness I have had on Asian airlines has involved giving away some minor item, like one time receiving a pack of cards because I had been a bit pleasant to the attendant when some young boys (national service age) in a row just near me were being rather overly demanding. Also, the Asian airlines usually offer 'select you own seat' at time of booking, at no extra charge, and 'select your menu choice' including choosing to take 'standard choose from two on lane' or a long list of special meals selected for both medical conditions or religious choices. They usually serve the special ones first, then the regular service, and then collect all the items at the same time. Oh, and the food is properly cooked and stored in plane till service so it survives in edible state till the meal time (even the pre-landing meal on a 12 hour flight). And the food is not just cheap, fill you belly for a while, carbohydrate stuff like pasta with maybe a flavouring of something else. And on most flights they include icecream as desert, served by a special fast walk through of the cabin from a basket, not a trolley.
