I've never had pigeon, but I suspect their breast is a lighter meat than mourning doves due to not flying very far.
Had to look it up. And as with most thing in English.... Pigeon is robbed from French, dove from German, and English made a mess of it all
And there is no consistency in what is what. Pigeon is
usually used when a dove is fairly large, while a dove is
usually a small pigeon, but it all boils down to whether or not the naturalist naming the bird had had his lunch or not.
The short story: They are the same
It is a bit strange, though. In other contexts the French word is usually used when an animal makes part of a meal. Cow -> beef, calf -> veal, swine -> pork, sheep -> mutton, roadkill -> poultry.
