So after years of avoiding the little bastards, I gave them a go today. Sauteed in bacon grease, of course.
Pretty darn good eats, but needed more bacon. Waiting to see if there will be a gaseous reaction.

Brussels sprouts are very traditional here around Christmas. They're one of my favourite vegetables. If you get a chance, you might try adding some freshly roasted (or, at a pinch, tinned) chestnuts to them, crumbled up. The tastes are very complementary, and even more so with bacon (you already have that part covered, I see
). Makes a great soup, too... especially with whatever left-over bits of meat there are after Christmas lunch, afternoon sandwiches and in-between-meals snacks.
Regarding bitterness... I've previously read, and heard, that only certain folks can taste the bitterness, whilst others can't (it's a genetic thing) - and this, allegedly, is the main reason why some people really like sprouts and others can't abide them. Me personally, I've never eaten a sprout that tasted bitter... I've had some that were undercooked and too nutty / firm, and others that were over-cooked to a mush. Neither were appetising in the slightest, but edible enough that I didn't have to appear ungrateful to my hosts
