I use a 400mm lens on the Canon 5DII for birds & butterflies. Often, cropping is necessary.
If you already have Canon glass and want more reach (Canon crop is 1.6x after all) without cropping and retaining decent IQ, just get a 7D. It seems crazy to contemplate futzing about with Sony or Pentax bodies with Canon lens adapters just for a small degree of DR and some extra megapixels, especially as you will lose AF by doing so.
