I always had in my mind that you can, like an graphic equalizer. But then again as I wrote, I'm more of a RAW shooter an very seldom look into the JPEG settings

You have it right now.
Pentax does a very poor job about explaining this, and originally I had the same idea as you did until the bulb lit up in my mind. Sound happens at all the different wavelengths and can be boosted or lowered as desired. Image sharpening (or softening) really only has two essential variables covering the entire image - radius and sharpen-to-blur amount. So, the three Pentax categories available to select are designating the radius - and I would guess by the looks of it that "Fine" sharpening is somewhere in the 1.2 to 2 pixel sweet-spot. The +/- gives you the range of sharp to blur with 0 neither sharpening nor blurring. Obviously, this applies only to JPEG and video, not the RAW file (other than instructions to the converter - if supported). As soon as you switch from the "fine" setting to one of the other two, you are telling the camera you want change the radius accordingly. So, you don't have an option to select more than one radius (fineness setting) for tuning.
I'd be tempted to hike the sharpening even higher in video to try to overcome the limitations of compression and middling bitrate on these Pentax bodies, but that's a whole different kettle of fish.
