What's the best way to do B&W images on the K-3?

Do both. Set your K-3 for RAW+JPG, then set custom-image to Monochrome. Your JPGs will be monochrome and your DNG files will be the same old regular RAW output so you can convert in LR later. I like the monochrome JPGs produced by the custom-image setting.

LR has presets to simulate different B&W filters. They are good starting points.

This was K5 but now using K3 II, no difference I use PS and Eff pro2. Shoot RAW.
