When I do want a B&W preview with Pentax I hit Live view, when I want a touch of sepia with Olympus I have to edit every shot in post.
Not sure if the Nikon's allow for variable sepia addition, but that would be the first thing i would look for.
My Z6 does - you can vary the effect level. Sepia can be adjusted from essentially not noticeable, to full sepia toning.
