What an interesting question... for me there is a life-long bucket list and a shorter, more realistic one. I’d like to travel to certain cities of the world, such as Tokyo or NY, Havana... shooting some film too.
I love Greece. Although I have visited a lot of places, my goal is to travel more and document the unique atmosphere of each village, landscape and spot. That’s what I consider to be a great printed album for my future kids to enjoy. As the world changes , it loses its character, so I wanna try capturing some folklore events while they still exist.
Another idea I work in my head is creating a project about all the remote churches I have/will visit. They fascinate me.

Just a thought for the OP. IN this case COVID may be your friend?
There is some interest in drag racing outside the US in Europe and Australia but with travel restrictions the normal journalists haven't been able to visit the US.
You may find that a magazine or web site in those territories would commission you to cover an NHRA event and provide suitable paperwork to persuade the NHRA to allow you trackside.

Going on a proper wildlife photo safari.

Traveling through and recording life and architecture in small rural towns.

Doing a bit of motorsport shooting again. It's been a while.

I visited London twenty years ago, taking a few unimaginative tourist snaps. I would like to go back and rectify that.

I find that just exploring the area within 25mi. of my house is a pretty big job; over my lifetime, I've explored most of Virginia, and I still find places I've never been every week. I can't begin to comprehend the exploration of half a continent.
