The plant in the second image is really interesting with really nice lighting, and a species completely unfamiliar to me.

Not at all, it's usable in a lot more instances than still life, it's just perhaps not the entire frame will be 100% pixelshifted. One of the reasons I love using RawTherapee so much to process pixelshifted shots is that I can see where the motion has occurred in the shot and whether or not 80% is ruined or only 20% etc. It only takes 1 second for a pixelshifted shot to complete, plenty of things stay relatively still for that period of time.
