TD;LR
Set the aperture ring back to A
Put the camera in Av mode
Turn the rear e-dial to change the aperture
There really is no point in using the aperture ring, as stop-down metering can be less accurate than when the camera knows the aperture.
You can also change the aperture on the fly while in P mode- just turn the rear e-dial and you will override the camera's aperture choice.
