How about leaving SR on, and pressing the shutter button manually?

For the shutter shock issue is this a problem even with the electronic shutter so that I should use a 2 second delay?
Shutter shock is eliminated when using the ES. On a tripod you should be using 2sec delay or a remote trigger. However if the wind is causing a lot of movement in your scene you may have odd artifacts with ES.

That, in combination with mirror-lock-up, to avoid mirror slap if not using life view, almost completely eliminated shutter-induced blur in my experiments. You can also use SR with the 2s delay timer by using custom setting 21. I haven't found negative effects of keeping SR enabled on a tripod in the respective shutter speed range.

It also helps to use your body to block the wind by standing between it and the camera. This works well as long as the wind isn't blowing straight into the front of the camera.

Another thing not mentioned is atmospheric turbulence. I've had days images were ruined even with a shorter lens like a 200mm. No tripod or camera setting will fix it.
Thanks
