To test for infinity focus, it is not best to do so with your frame filled with subject matter located a lot closer than the horizon. Manually focusing to infinity for a scene like this would more likely put most of it out of focus. To test for accurate focus other than infinity, it is best to set AF to center-only spot AF and find one particular object having clear-cut edges and well defined detail to focus on. A tree with a bunch of leaves allows the focus point to be hard to recognize, being trained about anywhere within the scope of the shot!
One of your old prime (non-zoom) lenses might have a distance scale by the aperture ring which will allow you to maximize your depth of field (DOF) for a particular lens when shooting from a particular spot.
