But you need to examine the reason for your failure. I think you simply chose the wrong bacon, probably the cheap rindless variety from the supermarket. (Probably past its use-by date) You must get the real quality stuff from a real butcher. And you need an experienced "wrapper" otherwise you will fail. I can help out here, I am an expert bacon wrapper. Just let me know when you need me.

Yeah. I agree. I don't know what it's like in Texas, but when I lived in Michigan, I could not buy bacon. They had a thing they called bacon, but it was just strips of fat. They suggested "Canadian Bacon", but that wasn't edible. It was a round manufactured meat product. Toxic. Back bacon is the way to go. Green or smoked, it's personal taste. This stuff
Streaky is good too. It's better for wrapping things to keep the moisture inside. I speak with some authority as an early member of the breakfast newsgroup "alt.2eggs.sausage.beans.tomatoes.2toast.largetea.cheerslove". It breaks all the naming rules, but it was allowed to go ahead by someone with a sense of humour. It used to be a fun group, but it was hijacked. Anyway, we knew our bacon.
