jpeg profiles are applied to the RAW in order to obtain, well, a jpeg.
color profiles, white balance, lens corrections, highlight/shadow corrections and many other settings are applied to the raw data from the sensor and used to produce a jpeg to your likings.
Even if you only shoot RAW and not RAW+jpeg, low quality jpeg preview embedded in the RAW file will be baked to your specs, so the RAW could
appear to be affected if you open it in a viewer that doesn't try to decode it, but just uses the integrated preview in order to display it faster.
