I read somewhere that Pentax JPEGs are so good that they are difficult to match with post-processing. So, I set the camera to save both DNG and JPEG, expecting that the JPEG would have in-camera processing. However, the jpegs seem to be exactly the same as unprocessed DNG files. Am I missing something?

The preview image you see on the DNG files is the processed JPEG embedded in the Raw file.
As an example, take the photo in B&W, you will see that the DNG shows the preview in B&W (the processed JPEG) but when you load the DNG into Raw processing software it will switch back to the unprocessed Raw data in full colour.
