Can anyone advise what function(s) are these linked to, to prevent them being utilised. My guess is a link to a program function. As I don't use program functions, I don't have intimate knowledge in this area.

ISO sensitivity setting is basically you telling the camera what range of auto settings you want it to perform.
Min shutter = the slowest shutter speed you're comfortable with before the camera starts changing the ISO value to keep a proper exposure.
The min and max ISO need to be set so the camera will adjust the ISO on the fly BEFORE being forced to change the shutter speed for a proper exposure.
This mode only affects auto modes that do not control the shutter speed by default (Av, P).
