Both strength and stiffness are essential because a weak plate can lead to a dropped camera and an overly flexible plate defeats the purpose of the tripod.

For a plate of a given thickness, titanium is both weaker and more flexible than hardened steel. Titanium only offers an advantage if it can be thick.

Lens plate

I have the 3.5" plate on my DA300F4 it has single slot that is 2.5 inches long and the plate is 9mm thick. These plates are available at Henrys.
