which diffuser and where to bounce

when you are in a room with brown ceilings and walls (brick and wood). I have not found a good bouncing solution in this environment. I hope there are suggestions.

sounds like the same boat I am in
we also have brown ceiling (wood)

sounds like you need a mini softbox like this one, so you can use a direct diffused flash

not sure how well it works, but soft boxes in general work great

the other thing you can try is the lightspere 2. I don't have one of these either, but I read that it bounces light off a ceiling and diffuses some of the light for direct flash as well.
you might want to check with others on this one, though
