In theory you should use manual mode always, because the exposure needs to be the same for each shot so that they can be stitched together without changes in exposure (such as a suddenly less exposed, more blue sky).

In practice it might be possible to vary exposure slightly over a Brenizer, but I wouldn't leave it to the camera's Av mode to decide how much, I would adjust manually either by varying shutter speed or by shooting RAW and developing them slightly differently. I've done the latter with panoramas but not with Brenizers. With Brenizers, since you've got several rows of shots, varying the exposure in this way would be quite complex - you'd need to know which images were from which row in order to make sure they fit in with the images on each of the four sides.

I think i was a bit too far away and there's been too little separation between the subject and background, but this is a Brenizer with the Fujifilm X-M1 and M 85mm f/2, this time wide open.

I'm way behind on everything photography, but I made this nice 56-shot Brenizer last month of some dang rocks I dug out of the "flower beds" in back of our new house. (The whole lawn needs tons of TLC.) They were a pain in the butt and needed to me memorialized! The pile has grown since then and will still get bigger. It's a work in progress.

Flowers. K5 with Pentax A 50 mm. 15 shots, landscape, in 3 rows of 5. I think I should have used a slightly wider aperture to get a sharper focus.

This one extended a lot further upwards but somehow the stitching went awry and generated some obvious artifacts, so I had to crop it into a much smaller panoramic format.

I did this one yesterday morning with the M 85mm f/2 and 153 shots merged to yield this 258MP result. It worked out well with no gaps, though I'd have liked to get closer to the gate to produce shallower DoF, but there was a fence in the way.
