I have never cooked a brisket before. But when you find one 75% off, a huge brisket that was priced at over 140 dollars only costs 38 dollars... it happens that suddenly I bought my first one
Then I left it in the fridge for over a month, up to a couple days before the use-by date, to make it more tender and have it age slightly. (I still have to work on the whole dry aged thing, this wasn't really it)
Here I am trimming it before separating the flat from the point (it's just too big to cook at once). The meat has a bit of an aged smell to it that is just wonderful to me. The flat is cooking as we speak... will be sliced and served with yummy BBQ sauce. Bacon beans are cooking as well. It's a good day around here
