Cooking in isolation...
A few days ago I picked up some chicken thighs - skin on, still on the bone. They were cheap, looked like decent quality, and were one of the few appetising things left on the fresh meat shelf of the supermarket I'd reluctantly visited.
Today, I decided to make a red Thai curry for our lunch. Comfort food. It also helped with my daily exercise because, having never skinned, de-boned and trimmed chicken thighs until now, I'd no idea how much of a work-out it would be (I'm no chef
)...
Anyway... this is diced chicken thigh, potatoes, onion, chestnut mushrooms and plenty of healthy garlic (good for the immune system
), in a red Thai sauce made with coconut milk. Medium hot, but a little hotter than medium
I served it up with fluffy white rice, and my Mum and Dad devoured it. So did I
