You can, because you have 2 e-dials: one should be mapped to control the ISO (set through the e-dial customization menu), and the other will be mapped to control the shutter speed (default).
So for instance:
Av-> rear e-dial controls aperture, front e-dial controls ISO
Tv-> front e-dial controls shutter speed, rear e-dial controls ISO
Sv (=P mode w/ manual ISO)-> rear e-dial controls ISO, camera sets shutter speed and aperture
Where it says -- you would want to select ISO:
