recovering highlights in raw- how?

Have a white bird shot that is great except for the burned out section on its back. The sun hit it just right and over exposed it. Shot with K10D and raw at iso 200. Looking at it in Lightroom the blue is the only channel that is going thru the top of the histogram. Other colors are fine. Isn't there a way to get the info from the other channels? Can it be done in Lightroom or CS2? Not very good at this type of thing.
The blinking highlights in the camera are based on the jpeg. Are the raw shots in Lightroom based on the raw info? Always shoot raw but haven't learned how to make use of the extra dynamic range yet. Beginner at computer processing.
