If you understand the principle of actual RAW is nothing merely black and white layers of data. "Manufacture specific curve" is exactly how Capture One gives those data meaningful color mapping. Which means, If you are using Sony sensor with identical lens, aside from the manufacture electronic noise, other than that, your RAW should be identical no matter if you are using Sony A7 or Nikon D810E, or even Pentax K3. (They are all Sony sensor).
Just think about this.. The minimal effect of electronic noise could be differ by cameras. But rest should be just like traditional photography. If you use the same film, same lens, you get same results.
When you change the "Base curve" You are basically telling a black and white data (now, paint this in Leica M9 color). or (Let's do Pentax K3 color).. However, since the curve and color mapping wasn't provided by the actual manufacture, so the colors might still be OFF than actual camera that produces the image. However, Capture One team basically use the specific camera, took the color checkbox to match them eye by eye. Not to be perfectly accurate or anything, but they are fairly close. When I switch color curves, I can totally see "particular branding" of colors pops out! To my experiences, it's quite accurate.
