Some basic organization's not a bad idea, but it's not essential. When you import into LR, you can organize into dated folders automatically. Once they're in, Lightroom doesn't really care where you store them, because it'll search the metadata for dates and you can use keywords to easily find them. It's just worth having some basic organization to make them easy to back up.

When you look at the date formats in the Import dialog, you'll see nested folders divided by a / (so YYYY/YYYY-MM-DD is a YYYY-MM-DD folder inside a YYYY folder), whereas hyphens (-) are part of the folder name itself.
