The term is expose to the right - not expose at the right edge. We all know that the LCD review screen is a JPEG based on the camera settings - that is a no brainer. That said, if the highlights are clipped in a JPEG (the LCD) that is an indication that you just might want to back off on the exposure a bit. If you practice enough you will get a feel for how much you have to back off and it is pretty easy to fix. You can also - through experience - know by the shape of the histogram if the clipped highlights are still within the range of RAW processing.
Just shoot like we did slides - expose for the highlights, let the shadows take care of themselves (with digital is is reasonably easy to recover highlights and lighten up shadows). If you did not shoot slides and shot mostly black and white - then pick the object you want to be middle tone and expose off of that.
If you never shot film - I'm sorry, but I can't help all that much. just shoot to where the highlights on the LCD are not clipped. Easy to do and you will have plenty of data to work with.
