all of these images just have a shallow dof except the long exposures. you're probably after the combo of a tighter bokeh (more pop) and faster glass (shallow dof). composition and working with the dof take practice.

i think that making an image appear more realistic, and pop, has a lot to do with composition, and tonal quality.. has to do with how the light shapes the object, and the area around the object..

The extent to which a photo has the 3D effect you're referring to has everything to do with the ability of the lens to focus closely, distance from the subject to the lens, distance from the subject to the background, and aperture.
