The problem with using the panning base of a ballhead is that you have no easy way to put the ball itself into the zero position. The RRS panning clamp is pricey but would save you a lot of fuss in leveling. I'm sure there are cheaper alternatives.
How to Find the No-Parallax Point
With a zoom lens you'll need to repeat the exercise for each focal length you want to use.
Unless you need huge output sizes I'd suggest using the widest workable focal length. Indeed, I'd suggest looking into an even wider lens (one of the Sigma UWA zooms) in which case you might not even need to stitch. But of course you'll need to correct for barrel distortion.
