It's not just today that these techniques started showing up. Back in the late 70's when I started shooting food for restaurant menus a torch was your best friend. If it was peppers and egg sandwich the peppers were never fully cooked. Carrots? Nope.

Your lighting looks a tad uneven. The important thing I've noticed with food photography is that you always want a bright and even exposure and light on your plate.

Try a mirror.

Or use a collapsible on the opposite side from the umbrella.

Shoot near a window during daylight and use a collapsible on the opposite side.

These are just a couple of options.

I've shot a lot of food. While it's tempting to use soft light, that's not the way to get sparkly highlights, which food does often want (especially veggies). If you rely on daylight only (not a bad idea), you might also want to assemble some bright aluminum-foil-covered tall, skinny boxes to provide some bounced sparkle.
