I like your approach of exposing for the sky and let the darks follow. It does solve a couple of issues, I'll give a try next time.
Digital is like slide film....if you lose the highlights, they can't be recovered.
So, in the field, we underexpose, but in the studio, we can expose to the right on the histogram until it is just below overexposure and then manipulate in PS or other to bring out the shadows and set levels.

Thanks for posting some of the raw files. I do think it helps us all make decisions about cameras. And, I think we need to say when images are manipulated when posting here.
