We tend to think we need the newest tools to do the job but in reality weddings were shot with actual film cameras for quite some time.
So no, you do not
have to use RAW and post processing to do a wedding photo shoot. However, there is no way I would shoot straight jpeg for anything I am going to get paid for. If you shoot RAW and nail the exposure and white balance in camera then great, just convert and print. But if you miss a bit then RAW gives you a lot more leeway to get things right in post.
But until you have a good workflow set up and whatever software you want to use purchased, there is nothing wrong with shooting jpeg. Learn photography, learn your camera, learn how to run a business if that's what you want. Worry about RAW conversion when you need to. And when you get to the point you need it, you will know. So don't get hung up on RAW, you have too many other areas to learn and you do not need additional frustration.
