I use this: Amazon.com: AmazonBasics Backpack for SLR Cameras and Accessories (Black): Camera & Photo
Quality and size is quite decent considering it's price. There are a few people complaining about the top handle breaking but so far mine hasn't and I've had it for at least two years now. I use it most during hikes with my wife along with our 3 and 6-yr old. If you're only taking one SLR body and two lenses plus basic accessories (Flash, charger and spare battery), you should be able to fit a few "Clean and Dry" stuff in the same compartment as your gear....baby clothes and diapers mainly.

Get a 60 litre rucksack with a bottom compartment and one of the chinese padded inserts... Camera gear in the bottom and nappy's (diepers in the US?), spare clothes (essential for toddlers), babywipes and 'stuff'' in the main compartment...

You also get a much more comfortable carrying system and look like a hiker rather than a tog...

I think that's the route I'm going to go. Using the insert will allow me more flexibility and comfort like you said.

I'm going to see how it works with the Deuter bag I have and go from there.

Something like this: NEW Ciesta Flexible(M) Camera insert Partition Padded Bag Case for DSLR SLR Lens | eBay

or this: DSLR Camera Insert Partition Padded Protection Bag-201# | eBay

Might do the job in the bottom compartment...

Deuter rucksacks have great back systems though!

I prefer using things like lens wraps and the Pentax DA lens case. It's not as bulky as a padded insert (I've got a Mountainsmith) and it's very configurable.
