If you are really uncomfortable, set it to Automatic or Portrait mode. This way you can focus on the composition and let the camera do the thinking. It would be better to take more control, but if you don't feel you have the experience to then it is just going to get in the way if you have to start worrying about what settings to use in each situation. Also, shoot in RAW and JPEG. If you are not happy with the JPEG, you might be able to do a bit more with the RAW, if you know how to process RAW files.

I prefer Av mode most of the time, since most of what I do is candid everyday life family pictures. If you are going to give Av mode a try, definitely practice. Get a stuffed animal and set it out on the counter and make sure that you are getting proper focus. At apertures around f/1.8, the depth of focus will be pretty shallow and it will be easy to accidentally focus on an ear rather than on the eyes. Even better if you have a family member or friend that you can practice on.
