Landscapes can't be done with a prime? People have been doing them with 50mm for a century now.
I didn't say you cant. But having one prime isn't as versatile as having a zoom lens.
Would a 50mm prime be enough for your landscapes, travel shots and portraits?
Maybe it is for you, I'm not sure it would be for me.
I'm not sure what the OP wants either though. I'm just putting up an all-in-one suggestion.

Versatile? Maybe not, a but a prime will make you a better photographer.

I didn't believe it until I tried it.

I was in a similar position as you a couple years ago. I ended up going with the Pentax K-x with the 18-55 and 55-300 kit which sold for $629 in 2010.

If you could find a similar kit today for the K-x or K-r, you would be in great shape.
OR
Find a K-x or K-r body and get the 18-135 zoom. (That zoom is WR but the bodies are not. If you need a WR body, then you could look at the 10D or 20D or 200D.)
OR
The K-30 is available with the DAL 18-55 for $619 at B&H and others. Then get an inexpensive tele zoom that you can upgrade later.

I've been very happy w/ my K-x, but I did eventually get the 18-135, and eventually I hope to get the K-30 or similar. (And I have picked up some nice primes-- A 50 1.7! -- and other lenses -- F 35-70 !-- very cheaply.)

Um, I have to respectfully disagree. Someone can be a good photographer with just one prime, for certain, but I cannot agree that just shooting with one prime as a beginner will make you a better photographer. More focused, disciplined and specialized, perhaps. Better? That's a big call. Versatility counts for a lot when you are just starting out.

Learning to work with with a single focal length is great exercise, and is a good thing to do at when starting out. But that can be done with a zoom. We've all wandered out with our first kit-zooms taped to 18mm, 35mm and 50mm after reading what good practice it is, right? But with your one prime in your beginner's kit, how is the beginner going to learn to appreciate all those different focal lengths that he or she just cannot reach?

It's possible to get a better image at 35mm with a DA35 than a a DA18-55, for sure. But as a beginner, I think that trading off the image quality of the prime to gain the range of experience you'll get with a zoom is definitely worthwhile.

K-30 kit and Lightroom 4 is what I'd get.

There is much you can do with the kit lens, shooting in RAW (dng), and using a bit of smart post processing.
