The aperture affects the amount of light that comes in
It also affects the depth-of-field. So make your choice based on your needs. When you close down too far (f/16 or higher like f/22 or f/32), you will get poorer results due to diffraction.

Auto-ISO is not available in M mode. M-mode with auto-ISO is called TAv and is not available on your camera (as far as I know).

Are you sure about K and M lenses in combination with Av?
