Bracketing with an M lens and fixed shutter speed is easy. Just count clicks on the aperture ring. Many lenses have clicks at half-stops, so if you have the exposure you want, take a shot, turn the aperture ring two clicks one way, shoot again, turn four clicks the other way and shoot again. That should be a three shot bracket with 0, +1 and -1 Ev.

Dave, that doesn't allow for rapid bracketing - all 3 in less than a second, for example.
