A few minutes with the user manual are usually helpful. I field a lot of questions on this site and have found that I can find the answer to most of them with less than a minute in the manual. You don't have to read the whole thing (advisable, but not required). There is an index in the back that is pretty complete. The index says that Self-Timer is covered on page 57 of the English manual (hot-linked in the pdf version).
"Timer off" is like most of the features of your camera. If a feature is not turned on, it is implicitly off. What I would like to see is a "Timer Cancel" feature. I tend to forget when I have set the timer or other optional drive modes and find myself waiting for the 2 or 12 second timer to finish
BTW, I think you are going to grow very fond of your camera as you get used to it.
