It sounds like ether the shutter doesn’t open like it should or the aperture doesn’t open like it should.

Sounds like aperture block. Go into the dslr specific sections of the forum and look in the k30 k50 sub forum. First post is all about that and there's probably more. That's too bad.

I still don't understand how you can adjust EV in auto mode (I've never tried it, but I thought you couldn't do that).

Anyway, To me, it is rather clear that your K-30 is defective. It's probably the aperture lever mechanism that is broken/malfunctionning.
How are the results using live view?
