No new tricks. Just leave Shutter button in Half focus and most wired & wireless remotes will do the same just read the specs on the remote to make sure that pushing the remote button half way will focus the same.

My wired trigger has one button for focus and one for shutter. There is a setting in the camera menu for releasing the shutter after focusing when using an IR remote. It is called something like "Focus priority"?

I don't believe that one can ask a stupid question but my wife says I stretch the limits.

With that thought in mind, how does one focus the dslr using one of these remotes.

I am an "old dog" and I usually use the view finder instead of the panel on the back of the camera, so if focusing using a remote, I guess I will have to "learn new tricks", is that correct?
I'm an old view camera user, so the rear screen is a natural for me. For me, if the camera is on a tripod, which is probably where is if I'm using a remote, and I'm not in some sort of decisive moment mode, I'm generally in liveview, and using focus peaking. You might find it learning a new trick, but it is definitely a worthwhile one to learn,
I'm using a k1 these days, which has a much more convenient screen for this.

No such app for iPhone, as there is no IR transmitter in the iPhone. Some (most? all? I think "some" is accurate) Android phones have an IR transmitter built in.

Since I have an iPhone, I've used a Goja remote with both a K-5 and K-3. Available here: : IR Wireless Remote Control for PENTAX Q, PENTAX DSLR (645D, K-5 II, K-5 II s, K-50, K-30, K-500, X-5, K-m, K-r, K-x, K-01, K-5, K-7, K10D, K20D, K100D, K110D, K200D, K2000) *ist (D, DL, DL2, DS, DS2) + Premium MagicFiber Microfiber Lens

They've worked fine and are dirt cheap.
