An alternative to the 2 and 12 second timers would be to use a wireless or wired remote to trigger the shutter. No need to wait. I suppose you need to make sure your mounting system is stable enough to not be affected by shutter shock, if any.

Several of the posters above have suggested relatively short-focal length macro lenses. I wholly concur on the macro lens, but unless your documents are rather large (you have to decide what that means, in terms of the space you have to shoot in), I would argue for a longer lens. The closer you are to your subject, the more likely you are to have distortions and focusing may be more critical.
