Noise/ISO?

Okay, so it was earth hour, and I sat in a room that was poorly lit with a candle. The first thing I noticed... NOISE! not in my camera, but in my eyes. So we know that noise in photos is pretty much from the high ISO/ASA. The larger light sensitive crystals. I don't want to get all scientific here, but can someone explain how the sensor on a DSLR replicate ISO? Really fascinates me. I know film can do this because it's film and our eye can do it... because I don't know why.

Basically what the camera does is apply higher amplification to the signal as you increase the ISO. It's like turning up the volume of an AM radio when it's got static - the static seems to get louder quicker than the music. When the bits and bytes come out in the image, the static comes out as little coloured dots - just like the ones you see in the dark.
