Good Evening, I ran across this "problem" or "feature" with my K100D. The bracketing setup and 2 second mirror up delay is on the same menu page, and you can only have one selected at a time. I chalked it up to begin a "feature" to move you up to the higher level body. Indeed, by acquiring my K20 it disappeared, since the bracketing control moved to a button. I would think that the K7 and K5 would also fix this for you.

I regularly use bracketing with the external shutter release and 2 second delay with my K20 mounted on the tripod for evening shots. It works very well.

I just cheched it, and yes in K-7 no timer with HDR, but in K-5 it is an option.
