JPEG? What's that? Oh yeah, it's that compressed tiny image I make for uploading to my website as an after-thought to producing the print version of the image.
If you don't like the JPEGs, don't shoot them... Seriously, some like shooting jpeg, some don't. You can tweak your jpeg settings - does it look exactly like a Cannon JPEG? Probably not -- then again, that isn't a Cannon lens, or a Cannon sensor, or a Cannon filter, now is it?
Worrying about how a camera compresses and encodes a lossy format is like worrying about someone else buying the wrong groceries for you... Just do it yourself.
