As others have said, each one has its application. The important point is to familiarize with each one in different situations/gear combinations to get a feel for them.
Personally, I use center weight frequently. But if the scene has a big dynamic range or high contrast, I switch to matrix.
With the 55-300, when shooting pics of birds, I usually use spot metering. I don't really care if the sky overexposes in those shots as I can deal with that in pp. However, for birds in flight, I try to use center weight or matrix as it is hard to keep the flying bird dead center in the frame and it will underexpose, metering off the clouds or bright sky.
It all depends on the application. Just have fun experimenting.
