I owned a K-x before I got the K-7. IMHO, the K-7 is just so much better in every regard (ergonomics, functionality, size, etc. etc.) except high ISO.

Agreed; I progressed from the K100D, then K10D and now the k-7. The k-7 is such a joy to use with many improvements (ergonomics, metering, focus assist lights etc.) over the previous models only to be topped by the k-5 with better AF and sensor. I also find the k-7 produces better color than my K10D (which has the old Sony CCD sensor). Of course, with better AF and high iso performance, the k-5 opens up new dimensions in creative photography only known before to very high-end expensive professional cameras.

Good choice.

The K-7 is also a very good camera and in many ways better then the K-x.

Well I'm a little mixed about the 18-135mm so I wouldn't order it. Think of what lenses you would want if everything would be ideal. Then make a plan how to get there.

I am just going with the basic WR lenses to start (the 18-55 and the 50-200). The first higher-grade lens I have my eyes on is the DA* 16-50mm (any thoughts on that lens)?. I want to have some better glass on my K-5 by Fall so I can get some good foliage shots.

I'm not a fan for that lens. But any of the other DA* lenses I love.

I Love mine... well, as much as one can love a lens . I haven't used it much on the K5 as of yet because I've been participating in the Single In games where we tie a single lens to the camera for a solid month and post a daily photo taken with That lens. I just haven't gotten around to the DA*16-50 yet (though I Have used it). For family function type things, it's my go to lens.

Another post of praise for the 16-50. It's optically a brilliant lens - best in its focal range I have ever used. The caveat with it is that it is worth insuring against SDM failure - the motor is apparently the size of a 5c piece and as such is prone to burning out. However, this is not to deter you or anyone else from investing in the lens - I believe it is worth buying and just covering yourself against the possibility of the loss of AF function due to SDM failure.
