So I just started playing around with my K10D and I noticed that the RAW images I am getting are only 8-bit according to Adobe Camera Raw. I was under the impression that I should be getting 12-bit color. Is there a setting I am missing?

You have not told Adobe to use 16 bit processing. It only has two options, 8 and 16 bit, so it is downgrading the received images.

At the bottom of the ACR window you will see some blue underlined text that may look something like this(This is my workflow, yours is probably different):

Adobe RGB(1998);16bit;4288x2848(12.2MP);300

If you click this text a Workflow Options dialog will open that will allow you to set:

Color space - Adobe RGB / sRGB / etc...
Depth 8 bit / 16 bit
Size
Opening Resolution in either pixels/in or pixel/cm

Once you set this it becomes your default opening settings for any pef or dng files you open with ACR.
