What's the big deal about "Weather Resistance"?

Before I owned a K10, I owned a K100 and I was hiking in El Salvador on the Volcan Izalco. It was a clear day when we started but halfway through the hike it dumped rain down. I put my camera immediately in a (non-sealed) pack and let it dry for awhile after I got back. There was water all through the camera. When I tried the camera again, it would take photos, but the LCD never worked.

Since that time, I have used sealed cameras and lenses in similar conditions without problem. Could I wrap my camera in a plastic bag and achieve a similar result? Maybe, but why? In my experience, weather sealing is a little bit of insurance against the elements when I am out in them.
