LiveView Question

I am new to the Pentax DSLR world. I have the Pentax K3II, but have ordered the new K1.

I am used to Nikons. With Nikon I can open LiveView and see my subject. Then, if I don't see enough light, I can turn a shutter dial and see how the LiveView lightens or darkens to where I need it.

I can't see how to do this with the Pentax K3II. Can anyone help me figure this out, please?

I use +- EV and the back dial.

LiveView only gives previews of exposures from +-5 EV from the metered value (darker or brighter can only be seen in the final image).
Depending on your shooting mode (P, M, Av, Tv, TAv, Sv) you can either use:

I would like to change the shutter speed in Manual mode and see the change reflected in LiveView. Is that possible?

I just checked. The scale reaches from -5EV to +5EV but the preview only shows differences up to 3EV from the average meter reading (i think this meter value is when the picture has an average brightness of ~18% grey) - you should see a variation in brightness when you change shutter speed while keeping ISO and aperture constant by default, but only in the small area of -3 to +3 EV.
I ran into this limitation when I was photographing the moon with average metering. The moon was too bright to focus on anything because it was overexposed in LV. The best workaround for moonshots is to use center weighted average metering or spot metering (depending on the focal lenght -> size of the moon in LV), then the preview is adjusted accordingly to the new meter reading.
