Custom Image (p. 205) can set the camera to black and white. If you're shooting only JPEG, the b&w is all you'll get. If you're shooting a normal, color JPEG, you can use the Digital Filter (p. 241) to create a b&w after the fact. And if you're shooting RAW, of course you can develop a b&w in camera.
For convenience, my choice is RAW+ (RAW & JPEG). That way I get an immediate b&w JPEG and I also have the RAW if I want something different later. I know there are many post processing methods to create nice b&w images, but I'm lazy and I like to let the camera do the work.
And the in camera "IR" methods can produce different results. Here's the same shot in three different forms. First is a normal color. Then an "IR" created from that color JPEG after the fact. And last is an "IR" developed in camera from the RAW using default settings. (The Custom Image preset "IR" result is the same as the "IR" developed RAW.)
